YOSHI - Super Happy Fruit Crêpes with Berry Reduction

When coming up with a recipe inspired by the trusty steed of the Mario series, Yoshi, it was only natural to go for a dish made with plenty of eggs - and a bright and cheerful breakfast seemed like the best way to represent Yoshi's happy-go-lucky nature. This accordingly leads us to the crêpe, the pancake's thinner cousin!


Crêpes are meant to be filled with delicious fresh fruit - which just so happens to be Yoshi's favourite! I went for a selection of fruits found in Yoshi's Story: melons, apple, grapes, and bananas! A mixed berry reduction represents Yoshi's original go-to snack from Super Mario World, as well as the fruit juices used by the Yoshis in Super Mario Sunshine.

INGREDIENTS

Berry Reduction:

  • ½ cup granulated sugar

  • ¼ cup water

  • 2 cups mixed berries, fresh or frozen (I used blueberries, raspberries, and strawberries)

  • 3 tbsp maple syrup or honey

  • A splash of orange juice

Crêpes:

  • 3 eggs

  • 1 cup milk

  • ¼ cup vegetable oil

  • 1 cup flour

  • 3 tbsp granulated sugar

  • ½ tsp salt

  • Watermelon, cantaloupe, banana, apple, and grapes for serving

  • Powdered sugar, for dusting


PREPARATION

For berry reduction:

  1. Heat water and sugar in a medium saucepan until sugar is dissolved and mixture becomes syrupy.

  2. Add berries, maple syrup, and orange juice, mix to combine.

  3. Use an immersion blender (or simply mash with a potato masher) to create a jam-like consistency.

  4. Allow to cook and reduce over medium heat until thick. Set aside.

For crêpes:

  1. Whisk ingredients together in a bowl until no lumps of flour remain.

  2. Cook a thin layer of batter on a hot griddle (alternatively, use an electric crêpe maker) until lightly golden. Carefully transfer crêpes to a plate, repeat until all batter is gone.

  3. Serve with fresh fruit, berry reduction, and dust with powdered sugar.
