WII FIT TRAINER - Health Nut Protein Bars

A healthy snack was a no-brainer for Wii Fit's training guru! I decided to keep it simple and make a homemade protein bar. Peanut butter, dates, oats, some hearty seeds and nuts, honey for sweetness, and some chocolate chips - and of course, protein powder! This is the perfect energizing bite before a workout.


Since this recipe is so simple, I decided to have a bit of fun with the presentation and package them with Wii Fit-branded wrapping!



 

INGREDIENTS

  • 1 cup creamy peanut butter

  • ½ cup honey (or agave if you want it vegan)

  • ¼ cup coconut oil

  • ½ cup protein powder

  • 1 cup rolled oats

  • cup chopped pitted dates

  • ½ cup slivered almonds

  • ½ cup pumpkin seeds

  • ½ cup mini chocolate chips (go for dark chocolate if vegan)

  • ¼ cup flaxseed

  • ¼ cup chia seeds

  • ¼ tsp ground cinnamon

  • ¼ tsp salt


PREPARATION

  1. Combine peanut butter, honey, coconut oil, and protein powder in a food processor. Process until smooth and fully combined.

  2. Add oats and dates. Pulse a few times until just combined.

  3. Transfer to a large bowl. Mix in almonds, pumpkin seeds, chocolate chips, flax seed, chia seed, cinnamon, and salt. Work with your hands until well combined. (For a richer and nuttier flavor, lightly toast the almonds and pumpkin seeds first!)

  4. Pack mixture tightly into the bottom of a greased tray (the size of the tray will determine the thickness: a cookie sheet will make them quite thin, while a 9x13 pan will leave you with a thicker bar).

  5. Place in the fridge for at least an hour until set.

  6. Once set, remove from tray and cut into bars. Wrap individual bars in tinfoil so they are ready to grab-and-go as a pre-workout snack!
